In 1 you are thinking about the "breakfast" part of the day (period of time
finished). In 2 you are thinking about the whole day (period of time not finished)

It is not normally necessary to say this; people understand if you say, for example:
"I have lived in some interesting places." (with no time period specified)
that you are talking about life experiences.

With "I saw" this means the same as "a short time ago".
